Is it okay to display rotas with the telephone numbers of volunteers in the Sacristy or on a Parish Noticeboard?

This is fine if the list is current and only includes those who have agreed to the arrangement. Some parishes rely on a volunteer co-ordinator who has all the contact details of parish volunteers and can be contacted if it is necessary to swap dates. The co-ordinator then phones others to arrange a substitute and the rota itself just uses names. An initial can be used instead of the last name if volunteers prefer this.

Is it okay to display contact numbers of Deanery priests on the Parish Office noticeboard in case it is necessary to ring around for a supply priest?

You should only display numbers already made public in the Diocesan Directory or website, not personal mobiles.
